Process: A blend of 20 month & 30 month old golden ales brewed with malted barley, raw wheat and raw organic spelt. Spontaneously fermented and aged in neutral French oak barrels. The beer was refermented on Tayberries from from East Sussex for 2 months. A further addition of apricot stones were made before blending and packaging.
Conditioning: Packaged with a small amount of priming sugar for natural carbonation in the bottle. We do not add yeast at this point, or at any point in the process. Bottles laid to rest on side and conditioned until release.
Ingredients: Malted barley, raw wheat, raw spelt, aged hops (whole leaf fuggle, saaz & strisselspalt), tayberries, apricot stones, water.
